homemade french fries

I usually take out french fries from McDonald's or Jollibee and buy potato chips but now, I will be going to teach you on how to make homemade french fries and potato chips. This recipe is healthier and you don't have to put salt or any spices for this snack to taste good. Others attempted to make perfect fries, but after frying these, the fries turned into soggy potato slices.

Potato chip snacks are full of artificial flavorings while french fries (Frenchies and other frozen ones) are a bit expensive and has preservatives that will make your hands sticky if you will touch those.

Making and cooking this in an old fashioned way is the best pot luck or gift that you can bring to parties without spending too much. You could make this during weekends or just slice the potatoes today, dry these tonight and then fry these tomorrow.

Here are the procedures:

slicing potato chips

1. Peel the potatoes and slice these to your desired thickness. I was using a slicer bought from Divisoria more than a year ago and hey!, it still works. Be careful though.

slicing french fries

2. After slicing, soak these on a cold water. The colder the better. Tip: If you want to fry these after 2 hours, just soak these on a bowl, place this on the freezer within a few minutes until it is cold enough, and then, put this out of the freezer and place this with other foods below inside the fridge.

Why do we have to soak these slices on the water?

Because cold water removes the starch that makes the potato slices stick to one another.

3. Planning now to cook the fries and chips? But wait, you have to make sure you will drain the excess water and dry these out. For effective draining, instead of using a strainer, place the slices on a plate (don't make these overlap) and then, place the plate under the sun.

If placing these outside is impossible, just place a table napkin, katsa (unbleached muslin fabric) or sheets of tissue before putting the potatoes. Reminder: have at least 2-3 folds because placing only a single sheet will make the draining process useless because it will make the tissues too wet and it defeats the purpose.

4.Heat the pan until a smoke comes out. Put oil. (I was using vegetable oil) Wait for the oil to become warm and then, you can now place potato chips and slices. But be careful, don't put too many slices and these must be spaced out properly in the pan. Why? because if the fries or chips were overcrowded in a frying pan, there's a tendency that the remaining water will mix with oil and instead of having fried potato chips and french fries, you will end up with boiled ones.

If you want the crispiest fries and chips, just cook these longer until become brown. Then, lay these on a table napkin or tissue and leave these until become dry.

Tip: Have 2 plates or bowls, while the slices that were already fried were drying out, just put these on another bowl when a new batch of fried slices comes.

Out of 2 medium-sized potatoes and after I already ate a few slices, wow! This snack is good enough for two persons.

homemade potato chips

Yum! Crispy fries and chips can now be served. In our case ( I and my family), we did not use salt or any spices, we just eat these on their own. You can use spices or dips if desired.

Homemade french fries and homemade potato chips are great! Since you already have knowledge on how to make homemade fries and how to make potato chips, you can turn these into a business. Aside from spending less in eating authentic foods, with exercise, you can now add this snack to your healthy diet.

It's been a long time since I have not updated this website and Pinay Food Junkie facebook page because of  being busy to many things. Now, here's my ramen review for Ippudo Ramen Philippines at SM Megamall. The world-class ramen house in Fukuoka is now in the Philippines!

Ippudo ramen is an internationally recognized ramen house founded by Shigemi Kawahara, an internationally reknowned ramen king, in Hakata (ramen capital in Japan). As the ramen store became more popular, it has built many branches in Japan and other countries such as New York, Hong Kong, South Korea, China, Taiwan, Malaysia and Sydney.

I came alone from an event and then I was hungry at that time and craving for Kichitora of Tokyo. I went down through an escalator and then, I saw a newly opened ramen house. At first, I hesitated to enter this japanese ramen restaurant because I thought the prices will range from 500 and up, but when I saw the menu, the ippudo ramen prices they offer ranges from Php 300-500.

Many people were eating inside and I sat near the ramen counter where cooks are creating their dishes. The wood-like ambiance is somewhat nice and the color designs are more into red and black. Since my place is on the leftmost corner of the counter, I have not thought that there's a power outlet there. Unfortunately, I did not bring my charger. ^^ Fortunately, I can put my bag on the basket under my seat and place this basket under the counter.

Ippudo's original tonkotsu broth and the descriptions from their official Philippine website:

Shiromaru Motoaji - Classic Hakata-style ramen served with ultra-thin noodles, chashu (pork loin), bean sprouts, kikurage (mushrooms) and spring onions.

Akamaru Shinaji  - A refined, modern style ramen served with thin noodles, pork belly, kikurage (mushrooms), spring onions, special blended miso paste and fragrant garlic oil.

Karaka-men - served with wavy-thin noodles, pork belly, kikurage (mushrooms), special spicy miso with ground pork, fragrant garlic oil and spring onions.

The staff was very polite and she also introduce to me the condiments. I waited 15-25 minutes for the food.

Pepper, sesame seeds, garlic and there's one missing but I am not fond of oil anyway. (Click on image for bigger size)

I ordered the Shiromaru Motoaji because I am not fond of garlic and spicy treats. I just played games on my iPad while waiting.

Honestly, I just find the shape of the bowl weird.

I made my first entry about Hokkaido Ramen Santouka vs. Kichitora of Tokyo and I love these noodle soups but now, Ippudo Ramen is on my top list even I already ate at Wrong ramen and Ramen Nagi.

Despite of having many thin sliced chashu and a large seaweed, I can taste all the ingredients combined. Later, I decided to sprinkle sesame seeds and pepper to my soup. Even after finishing a bowl, I can still feel the taste left on my tongue.

The waitress asked me to fill up a feedback form and here's my opinion.

Now, this ramen is my top favorite! I'll just give a no perfect 5 star rating because I just find the place crowded, not too clean and busy. Anyway, the staff is very polite and the ramen tastes really good making me to crave and come back for more.

Here's my overall rating:

Delimondo owned by Enrile

Long long time ago... I'm very busy and now I'm back. Tonight's entry is about the Delimondo corned beef. I guess many will wonder why on earth did I include Juan "Tanda" Ponce Enrile in this food review. Well, the latest news, ( I don't think there is a word called "newest news") is an opportunity for me to have a motivation to write this.

Corned beef is being consumed both by the rich and the masses. Many brands of corned beef are available everywhere but with this one, I can only see this being sold in Trinoma Landmark and other "sosyal" grocery chains such as Rustan's, Cherry Foodarama, etc. Enlighten me if I'm wrong, no one can buy this on biggest food chains. I did not see even a single can of this Delimondo corned beef being sold in SM, Robinson's and 7-11 stores.

Jaka foods corporation
I came to know this corned beef because of comments in forums and Senyora Santibañez page. I tried to buy one and then....I'll just post my review later. :)

Many don't have a clue that the manufacturing company behind this corned beef, JAKA Food processing corporation is owned by Juan Ponce Enrile and currently, his daughter, Katrina, is the CEO of JAKA Group. I came to know this information from my father and searched the web to confirm this.

Despite of knowing this, I cannot say where did the funds to start his company, JAKA corporation, came from. What I think is he's really guilty of graft and corruption and I don't think that he must be allowed to have a bail for the reason that he is very old. Come on! he is really though to make this crime because he knows Filipinos are very "maawain" (tender hearted) and I find this unacceptable. Ehem.. so my advice to the thieves, just run for a public seat or steal millions of pesos so you can still have a comfortable life being sentenced by the court wandering outside prison cells or staying in a vacation house. The best advice that I can recommend is to bribe the jail guards, public officials and the court. (Okay my sarcasm ends here).

This is what you are waiting for, my review for this corned beef.

Reviewing this Delimondo corned beef.
My sister's own recipe. corned beef combined with egg, garnished with cabbage leaf and whipped with mayonnaise.
Sorry if I weren't able to capture an image in its raw form. Anyway, I heated this food first through cooking it in a frying pan. I tried eating this without rice and then.. boom! The Delimondo Ranch Style corned beef flavor tastes good and not salty unlike eating Argentina corned beef where it tastes good with rice but not on eating it solo.

Still, to have a greater dining experience, eat this with rice. I bought this at 110 pesos. The food is very delicious and not so dry nor not so wet but a bit expensive.

Ginza Bairin Kurobuta tonkatsu

I ate yesterday at the newest japanese restaurant in Trinoma. The Ginza Bairin katsu restaurant in Trinoma will give its first 100 customers a P500 gift card and it can be used on the next visit. The waiter greeted me and told me that they will give me a gift card because I was included on their first 100 tables served. Since I posted before a Yabu review in this website, I wanted to try this katsu restaurant.

Ginza Bairin price list

The kurobuta katsu rosu set here costs 595 pesos while in Yabu as I remember it was 590 pesos for 120 grams. Hmmm... I'll wait and see if it can surpass Yabu's kurobuta set. It was Saturday and many folks dined there. As I observed the surroundings, it was good and exuded the Japanese culture appeal but Yabu's ambiance was better and larger.

But wait.. I like this area, it's like you are in a simple japanese ramen house. Because of this, I decided to stay there.

These are sauces, spices and condiments on the table. While in Yabu, the waiter will explain the ways of using these for the katsu, here in Ginza Bairin, they have a guide for these.

At last, my ordered Kurobuta Rosu Katsu set comes here:

Ginza Bairin review

The set includes unlimited rice, fruits, japanese pickles, cabbage and miso soup. You can also read my Yabu review so you can compare the meals. I just noticed that the pickles in Yabu is more on a reddish purple color.

Since I ate alone, I cannot emerge the tofu and the leaves in the miso soup.

Here it is.
I asked the waitress if how many grams does this tonkatsu possess. She said it is 120 grams.

Eating Ginza Bairin kurobuta rosu tonkatsu

Ginza Bairin restaurant

You can watch the actual meal here:

The kurobuta katsu here looks smaller than in Yabu or it's just that Yabu's kurobuta tonkatsu is wider. By the way, the meal's very delicious and I want more. The staff and the manager were accommodating. I saw this promo:

Ginza Bairin japanese restaurant

Since I cannot connect to Ginza Bairin's WiFi, I just tried my WiFi connection, I showed the picture to the waitress and I was glad I'll have a taste of their ice cream.

This ice cream's filled with black sesame seeds. Its taste is similar to hopia mongo.

I want to have another scoop but I just thought I'll forget about it and I don't want to spend impulsively to a scoop of ice cream.

The managers asked me if the food's good and I said yes because it really tasted good and the service was good and they have the feedback form just like in Shakey's.

It happened that in terms of ambiance, condiments, service and side dishes, Yabu's better. In terms of the kurobuta, they were the same. Regarding promos, I like Ginza Bairin more.

If you are in Trinoma, you don't need to go in SM North just to eat Tonkatsu. Ginza Bairin and yabu have the same quality food. On other aspects, it's up to you if which of the two will you choose.

Nodasho
You read the title right. Nodasho 野田 or のだ庄 in Little Tokyo, Makati is the best japanese restaurant out there. We ate before at Izakaya Kikufuji this year and food there was delicious especially the ebi tempura but when I taste Nodasho's ebi tempura, I thought that the latter's better.

Little Tokyo is a place where you can find authentic japanese restaurants built by the Japanese community/expats (besides Japantown in Davao). I made this Nodasho review for you to be aware what's inside this restaurant and it's up to you what restaurant you'll choose in Little Tokyo.

It is located in Pasong Tamo, Makati. You'll see the Little Tokyo sign beside Seryna, a big japanese restaurant.

I assume that you did a Google search image before on Little Tokyo but I'll show you a pic on how Little Tokyo's front looks like when you are looking for it.

We are now here at Nodasho:

I can't read all of this

Nodasho's crew were busy serving customers during this daylight. There were reading materials including japanese comic books for customers to enjoy while waiting. Sake (japanese rice wine) were also served there.

Japanese green tea
Even the interiors were old, I can still feel that we were in Japan because of the petite clean rooms for eating. Diners will sit on the floor with zabuton (japanese cushion for sitting).

Under the table, there's a deep part where you can place your legs and feet so you don't have to cross your legs while sitting. Sliding doors in each small room are a plus so diners can get a privacy.

Since there's privacy, we enjoyed looking at the price list/menu, taking our family pictures, chatting our would-be vacation, etc. Green Tea was served first.

After minutes of waiting, California Maki is here to be ravished.

Reviewing Nodasho maki

Nodasho's price of this California Maki is 200. The quality of maki is superb. Better than the ones in BGC (I am also referring to Keizo). The rice wasn't easily crushed or dispersed and wasn't hard either. Upon eating, I can feel the softness of the rice and the deliciousness of the crab eggs on the top. Mayonnaise was so yummy.

Eating california maki in Nodasho

Nodasho uses US beef on Beef Shichirin. It costs 700.

Looking at Nodasho price list

One of the most well-known japanese foods, the Chicken teriyaki for P300.

And the most in demand, Ebi tempura for Php 420

eating ebi tempura little tokyo

The coating sticks to the shrimp and vegetables. This dish wasn't only delicious and easy to bite but wasn't also oily.

You can enjoy these foods served above by ordering a cup of japanese rice for a price of 60 pesos. Very expensive neee... Japanese rice here is tasty but if you are eating in groups, just bring a packed rice.

The last serving is Shoyu ramen.

This ramen looks dull and boring at first than those served in ramen houses. Even though it didn't taste like soy sauce since it's shoyu (japanese soy sauce),  Try it! You'll love it for sure. Price for this is 280. The serving is in medium size for 3 people.

There's a bell (the one used by mamang sorbetero, pinoy term for ice cream peddler) that you can use to call the staff. Overall, the service was okay.

We were very satisfied with Nodasho. Not only the food was great but also the ambiance of Little Tokyo where you can feel that you are in Tokyo, Japan, a mini different world within Metro Manila.
